“If you’re going to drink, drink for a cause!”
Deirdre Hays, head mixologist at Benny’s Chop House in Chicago, is helping to promote a great cause: she created a new cocktail named “White Light, Pink Heat” in support of Breast Cancer Awareness Month. For the last two weeks of October, 100% of the proceeds of the sale of this cocktail will go to Gilda’s Club.
Inspired by “Brazil meets Paris,” Deirdre’s recipe uses pink peppercorns (that grow in Brazil) to color the drink pink, and egg whites to create a thin layer of foam, giving the cocktail a soft texture. Topping with rosé champagne gives the rich feeling of sitting in a bar in Paris. Because Leblon has a aromatic nose it blends well and embraces the other ingredients in the cocktail.
White Light, Pink Heat
1.75 oz Leblon Cachaça
0.75 oz Velvet Falernum
0.75 oz Peachcello
1 oz pink peppercorn simple syrup
1 oz Key lime Juice
1 egg white
Dry shake all ingredients well, add Ice, shake, strain into cocktail coupe, top with rosé champagne.
